Pohlman's Meat Processing, Est. No. 6961, Terre Haute, IN is a very small family owned and operated custom slaughter and processing facility. This plant receives live cattle, swine, sheep, goats, and buffalo for slaughter two days a week. They then process the carcasses into retail cuts including ground beef, pork sausage and cured and hickory smoked pork products on a 5 day work schedule. They have just recently been USDA certified for organic livestock processing 12/09. Mr. Theodore Pohlman III is the plant owner of the establishment and operates it along with several of his family member employees: Yogi (Ted IV), Wally (the youngest) and sister Robin. Three other of Ted's daughters sometime help in the business when needed. Ted Pohlman is responsible for implementing and daily monitoring of the Sanitation Standard Operating Procedures (SSOP), recording of the findings and any corrective actions taken. He is also responsible for training and assigning specific duties to other employees and monitoring their performance within the SSOP's. The plant has been in operation since 1965 and they have been USDA certified since 1986. Ted III has been working in meat processing for over 50 years. One of his most notable places that he worked before starting his own company was the Home Packing and Processing facility in which he was one of the few survivors in the tragic blast that destroyed the facility in 1963 in Terre Haute, IN. They also do custom processing of deer in season, making their locally famous venison jerky, vension salami and venison sausage.
